The 5 Minute Power Breakfast

At the risk of sounding boring, I'll say it anyway: don't leave home without it. Breakfast that is. And a good one.

This is my 5 minute power breakfast for two. The Layla McMuffin. It's low cal.(about 350, 400 calories, if you use butter), Low cholesterol, low sodium, high protein and yummy. It will keep you going like an energizer bunny way past lunch time.
You must be able to multi-task in order to make it fast. Please note: I am not paid for mentioning any brands or products. I just like them.
Ingredients
2 buns sliced (I like sour dough)
3 eggs or equivalent liquid egg substitute
1 oz. cheese grated (your choice)
4 slices Morning Star veggie bacon (it tastes way better than it looks)
Non-stick cooking oil spray
Fresh chives or herbs or your choice
Seasoning to taste (I like Goya Adobo all purpose low sodium seasoning).
1 pat of butter (optional)
To prepare:
Heat oil in 8" pan. Whisk eggs together with grated cheese and seasoning. Place bacon in microwave according to package instructions. Spread sliced buns with a smear of butter, place in toaster oven. Add eggs to pan and prepare as an omelette. Divide in two portions. Slide mini omelette onto one side of a bun. Crumble bacon slices on other side. Sprinkle chives. Enjoy!
You can also assemble it like burger, wrap in waxed paper and take it to go. Either way, you'll have the fuel to conquer the world.
